Atayef or the tiny little Lebanese / Arabic crêpes. A recipe that only requires 10 minutes of preparation and it is so easy to make. This dessert is well known in the Middle East, very light and fluffy atayef are garnished traditionnally with Ashta and pistachios with a drizzle of syrup or Ater.

The originality of the recipe that I am sharing with you in this blogpost is the flavor of atayef. Ladies and gentleman, please welcome the chocolate flavored atayef stuffed with Nutella.

The recipe I am sharing with you in this blogpost is adapted from my dear Nadia Toummalieh. My twist for Nadia’s recipe is flavoring the atayef with cocoa powder. I had to make two trials in order to get the right amount of cocoa powder and the right consistency of atayef. Thank you Nadia for sharing with us always all your best recipes. The Atayefs remind me a lot of my family during Lent. When we meet at 18h together to eat the atayef after a long studying day. But most of the times, I replace the ashta (since I don’t like it) by a tablespoon of sugar: O

Chocolate atayef recipe (adapted from Nadia Tommalieh)

Preparation time: 10 minutes. Baking time: 30 seconds/atayef. Number of atayefs: 15.

Method

As soon as the air bubbles appear on the surface of the mixture, the dough is ready for cooking.

In a non-stick skillet, previously heated, pour small circles of dough with a ladle. Cook one side only, well enough, so that the top of the dough doesn’t run.

Cover the cooked atayef with a clean towel so that they won’t dry.

To stuff the atayef, garnish them with a tablespoon of Nutella in the center, stick the edges together to have the shape as shown in the figure below. You can add also hazelnut powder for example or hazelnuts in addition to the Nutella.

After sticking the edges, you can also add crushed pistachios and raspberries. It’s a delight!
